He was born on December 5, 1959, in Okaibe - Keserwan. His father Gergy Daccache was a farmer, and his mother, Therese Trad, was a housewife. Chaouki is the eldest brother for three siblings Joseph, Jihad, and Georgina. He was born and raised in Okaibe- Keserwan Ftouh, he tied the knot in its Mar Doumit church with Tania Farah from Chamat, Jbeil, and they have together five children Maria-Theresa, Janay, Elaya, Chaouki Junior, and Joseph. He is a dedicated husband and a loving father.

Chaouki completed his formal education in Jbeil public high-school, then he enrolled in the Lebanese University - Faculty of law, Jal el Dib.

Chaouki started his early career in the agricultural enterprise with his father. On December 14, 1993, he made his first step into the Industrial and Agricultural world by establishing "Gergy Daccache & son’s Co," a well-known company in the Middle East and Europe.
With eagerness and experience, Chaouki has expanded his work into several factories with a total area of 10,000sqm that deal with agricultural infrastructure field, welded tubes, tunnels and bitunnels.

Daccache agriculture is an agent of many international companies around the globe reaching Australia by using the latest agricultural and industrial technologies.

His ambition refused to be limited in one place, following the technological progress in the agricultural and industrial field, Chaouki has established Vitroland that deals with tissue culture mainly on August 15, 2004;

He has established Services & Manufacturing Trading SAL on December 6, 2012.

In 2013, he established Lida for iron works, and he has founded with his partners alamar al Ziraieh - Al Baraam Farm that deals with modern agriculture development projects by integrating the Hydroponic system in Saudi Arabia in 2015.

On May 15, 2016, he has participated in founding Agafart in Italy for fertilizer production, last but not least he has established Chronoseeds Company in Spain for Chronic Seeds production.

Chaouki joined the defense like most of his generation in 1979.

He climbed from legislative committee officer to the pioneers who joined the Lebanese Forces party during the martyr president Bachir Gemayel period.

After Doctor Samir Geagea’s imprisonment during the flagrant control of the Syrian regime in Lebanon, Chaouki and his comrades were being abducted and tortured many times to dissolve the Lebanese Forces. Nevertheless, Chaouki kept his devotion to the cause by attending all the meetings to stand for his beliefs and to maintain the existence of the Lebanese Forces party during the struggle.

He was a member of Al Kataeb legislative committee in Keserwan Between 1985 - 1989.
He is the president of Al-Daccache Association, Okaibe.
He established Al- Daccache dispensary in Okaibe, in 2000.

A member in Al- Andalus Sports Club, Okaibe.
Nominated by the Lebanese Forces for the Lebanese Parliamentary election in 2005.
Coordinator of the Lebanese Forces in Keserwan- Ftouh from 2010 - 2012.

Member of the central committee in the Lebanese Forces.
Member of the legislative committee in the Maronite League
Member of the director's Board and a chairman of the lobby committee in the Lebanese Industrial Association since 2000.

The founder of Ardouna Association that deals with agriculture sector in Keserwan- Ftouh and Jbeil.
Member of the Labour Dispute Arbitration Committee in the Ministry of Labors.
Member of the Jesus Trail Association “Darb El Masih” that shed lights on the trails and towns that Jesus Christ has visited in the South of Lebanon.
